Flourless Gluten Free Peanut Butter Cookies
Makes about 2-3 dozen cookies.
Ingredients:
1 Cup Creamy or Chunky Peanut Butter (for sugar free, use natural peanut butter)
1 1/4 Cups Sugar (for sugar free, use splenda, stevia or xylitol)
1 Egg
1 tsp. Baking Soda
1 tsp. Vanilla
1 Cup Chocolate Chip Cookies (optional)(for sugar free, use sugar free chocolate chips)
Directions:
- Preheat oven 350 degrees
- Line cookie sheet with parchment paper
- Combine the peanut butter, sugar, egg, baking soda, vanilla and chocolate chips(optional) in a big blow, mix until smooth
- Drop the batter by the spoonful onto the cookie sheet
- Dip a fork into sugar and press the fork on the cookies making a crisscross design.
- Bake the cookies 8-10 minutes or till golden brown
- Cool for 5 minutes before serving
I am always on the lookout for good gluten-free cookies that I can just open up the package and eat them with a glass of milk.YUMMY!!!!
