Two pancake breakfasts will be held this summer at Ligonberries Market in Vancouver WA.

July 17th from 8:00AM to 10:00AM
The first Pancake breakfast will demo mixes from Bob's Red Mill, Laurel's Sweet Treats, and Kinnikinnick.


Cost: $5.00 per person children 5 and under free maximum $12 per family

August 21st from 8:00AM to 10:00AM
The second Pancake breakfast will demo Gluten Free Mama's, Sylvan Border Farm and Pamela's.


Dairy free options will be available at both events. If enough requests are submitted for egg-free, they will also make options for this.

Cucumbers and little recognized methods to prevent type two diabetes

Are you cool as a cucumber? Not only is the cucumber known for it’s ability to cool-down the body, it has additionally been known to help with jaundice, diarrhea, epilepsy, sore throat, conjunctivitis (redness of the eye) and swelling of extremities.


Often you should attempt to deseed the cucumber as the body can have trouble digesting the seeds. It is possible to deseed them yourself easily by cutting them in half and utilizing a spoon to eliminate the seeds or if you wish to eliminate this step it is possible to buy cucumbers that are already seeded.


Fresh cucumbers are easy to add to salads and for an easy salad just toss diced cucumbers with sliced red onions, red tomatoes and your favorite all-natural, low-fat balsamic vinaigrette. This can be a fast way to make a refreshing salad that reaps the benefits of cucumber.

Anti-diabetic Advantages of Cucumber:
Beta cells present in the pancreas produce the hormone insulin. Cucumber is found to possess a hormone needed by the beta cells in the insulin production. Moreover, the Glycemic Index of cucumbers is found to be zero.


Why Cucumbers have not a glycemic index listed? Does this signify they do not raise blood sugar?

Not at all. It only denotes that under the "rules" for the meaning of the glycemic index, it is too hard to get an accurate number. This is because you'll need to eat a very big amount of the food to get 50 grams of carbohydrate at once to be tested. In general, the lower the quantity of carbohydrate in a vegetable and the more fiber it has, the less the increase in blood sugar will be.

The carbohydrates are primarily responsible of the raise of the glucose level. But the carbohydrates present in the cucumber are easily digestible in a diabetes patient’s stomach.

Tips for Preparing Cucumbers:
Unwaxed cucumbers don't need to be peeled but need to be washed before cutting. Cucumbers can be sliced, diced or cut into sticks.


A couple of Quick Serving Ideas:
- Use half-inch thick cucumber slices as petite serving "dishes" for chopped vegetable salads.

- Mix diced cucumbers with sugar snap peas and mint leaves and toss with rice wine vinaigrette.

- For refreshing cold gazpacho soup that takes five minutes or less to make, simply purée cucumbers, tomatoes, green peppers and onions, then add salt and pepper to taste.

- Add diced cucumber to tuna fish or chicken salad recipes.


Cool Cucumber Salad Recipe:




Ingredients:
- 3 medium cucumbers, peeled, seeded, and cut into 1/4-inch slices
- 1 carrot, peeled and shredded
- 1/2 red onion, sliced paper-thin
- 1/3 cup minced cilantro


Dressing:
- 1/2 cup rice vinegar
- 2 tsp. honey
- 2 tsp. Reduced-sodium soy sauce
- 1 1/2 tsp. toasted sesame oil
- Pinch dried red pepper flakes


Preparation per 8 servings:
Preparation time: 25 minutes
Marinating time: 1 hour


1. Combine the cucumbers, carrots, red onion, and cilantro in a large bowl.


2. Combine the dressing ingredients. Pour dressing over cucumbers, cover, and refrigerate for 1 hour. Salad might be eaten with a fork.


Nutritional Values per Serving Size: 1/2 cup
- Calories: 25
- Calories From Fat: 10
- Total Fat: 1 gram
- Saturated fats: .1 grams
- Cholesterol: milligrams
- Sodium: 50 milligrams (without added salt)
- Total Carbohydrate: 5 grams
- Soluble fiber: 1 gram
- Sugars: 3 grams
- Protein: 1 grams

Happy Father's Day


Happy Father's Day to all those great Dad's out there. You work hard for your family, so take the day off and relax you deserve it .

This picture reminds me of a picture I took of my husband and my son at the zoo. Our son looked so little then. It was such a great day. I have a such a wonderful Dad and Husband.

We are going out to dinner today with my parents to celebrate Father's Day. What are you doing today for Father's Day?

Give your Dad and Husband a big hug and tell them how much you appreciate them. Then take them out to dinner. He will appreciate it. Have a wonderful day everyone.

Metabolism and It's Relationship with Weight Gain

I have been thinking lately about how to effectively loose weight. Here is how your metabolism effects your body weight. I may write more about loosing weight in the future.



Metabolism is a physical and chemical process occurring naturally in the body to sustain life. To give you a better view on its relationship with weight gain, you should be able to understand these two important aspects of metabolism: metabolic rate and the factors affecting metabolism.



Metabolism is the rate at which your body is capable of using energy as well as burning your calories. Metabolism functions the same way in every individual. However, the rate at which the nutrients are metabolizes vary per person. Here are the two aspects of metabolism to help you in fully understanding its connection with weight gain:

 


Metabolic rate

 


BMR or basal metabolic rate is the given rate at which the body is able to burn the calories while it is at rest. To get your BMR, you multiply your current weight by ten (10). If your weight is 150 pounds, then you have a BMR of 1,500. Meaning to say your metabolism can exhaust about 1,500 calories per day. Taking more than 1,500 calories a day would result to weight gain. Although, this is just an approximation. Regular exercise speeds up metabolism making it a good way of impeding weight gain. Those who have a high metabolic rate has the ability to burn more calories compared to someone who has slow metabolic rate. Even if two individuals take in more or less the same amount of calories, the one with the higher metabolic rate will surely burn fast and more calories from the food intake. The one whose metabolism is slower, will eventually not burn all the calories. Instead, the excess calories would be converted into fats resulting to an increase in body weight.



Factors affecting metabolism



There are a number of factors affecting the metabolism process in your body. Generally, they also affect every person’s needs in terms of calorie intake. Below are the following factors contributing to metabolism:


  • genetics – there are people who are simply born with a body that is capable of burning more calories.

  • age – those above 40 will notice a decrease in their metabolic rate by 5% every ten years. this is primarily due to a certain degree of change in the hormonal balance.

  • gender – it is observed that men have higher metabolism compared to women.

  • height – shorter individuals are most likely to have slower metabolic rates than taller individuals.

  • body composition – individuals with more muscles and more body weight have the tendency to have higher metabolic rates than those with thinner built.

  • activity – the more you move, the better it is for your metabolism. Engaging in exercise activities will promote an increase in metabolism.


It is a never ending thrust for body conscious individuals, especially women, to lose weight and eliminate body fat. Engaging in various weight loss programs can be burdensome and costly. However, there are other methods which tear down the traditional way such as the fat burning furnace diet. You can search through the Internet for more information on this one.

Update on my ankle

Got my cast off on Tuesday, now I am wearing a small black boot. The Doctor said I could put partcial weight on my my foot this weekend. And in maybe in a couple of weeks I can put full weight on my foot. It will be good to be mobile again. Thank-you Jesus.

Glad to be back home

I got back home a couple of days ago. It is really good to be home.

I was able to go to my Step-Father's memorial service. It was a real nice service. He was only 57, that is really young for these days. He had a liver transplant in January, so this was really unexpected. It was really good to see everyone in the family that I have not seen in a really long time. It was a very sad time and a very stressful time.

I was still in my cast and it was hard getting around. Trying to keep track of kids and everyone was sad and stressed out. The good news is I get my cast off on Tuesday and get more x-rays to see how my ankle is doing. I am not sure what the doctor will want to do next.

Please pray for my Mom, this has been really hard on her and she feels lost. It is so hard to see her this way. She has to move out of her house. She has been packing all week. I told Mom I am here for her.

Thank-you everyone for your prayers and concern. It is really appreciated.
